Wash and cut up squash. Place in pan with garlic and onion. Add tomato slice and seasonings with fat. Pour water over mixture and steam 15 minutes. Drain off excess water and turn upside down in a vegetable dish. Sprinkle with grated cheese and paprika. Serves 6 to 8.

STUFFED ACORN SQUASH

4 acorn squash ⅓ cup crushed pineapple or apple sauce

1 egg

⅓ cup melted butter 2 tablespoons honey or sugar

1 teaspoon mace 1 teaspoon salt

Wash squash and cut in half. Sprinkle with salt and place cut side down in baking pan with small amount of water. Bake about 1 hour until soft. Remove from oven. Cool. Scrape inside of squash into mixing bowl. Mash well. Add egg, honey and melted butter. Beat until light and well mixed. Add fruit and spice. (If mixture seems dry, add 2 tablespoons cream or milk.) Fill each shell with mixture. Dot with butter. Return to oven and bake 15 minutes longer. You can garnish each shell with cherries or pineapple slices. Serves 8.

A grand luncheon or dinner dish served with roast pork or fowl.

BAKED BANANA SQUASH

½ banana squash 1 teaspoon salt

½ cup sugar dash nutmeg ¼ cup melted butter

Scrub outside of squash. Cut into pieces about 4 inches square. Remove seeds and fibres. Cut off outside skin. Place in boiling water with salt. Cook 10 to 15 minutes, being careful not to break. Remove from water, place in a baking dish. Sprinkle with a mixture of melted butter, nutmeg and sugar. Bake 20 to 30 minutes until done. Serves 6.

Squash, like humans, change their clothes for the seasons. A heavy skin for winter, a thin one for summer.

STEAMED SUMMER SQUASH SUPREME

1 pound small squash 1 teaspoon salt and pepper dash nutmeg

1 medium onion, diced

1 green pepper, diced ⅓ cup tomato sauce

1 teaspoon paprika 1 tablespoon Worcestershire parsley

2 small stalks celery, chopped

Select small firm squash. Wash and remove brown ends. Sauté in butter, onion, celery, pepper and tomato sauce. Then add diced squash. Steam 10 minutes. Add seasonings and Worcestershire sauce. Steam 12 to 15 minutes longer. Serves 4.

Squash can be baked by placing in a well-greased baking dish after cooking. (Be sure it is well drained.) Sprinkle with bread crumbs and butter or grated cheese. Bake for 15 minutes.

BAKED ACORN OR HUBBARD SQUASH

3 acorn squash 2 tablespoons butter

3 tablespoons honey salt to taste 1 teaspoon ginger dash nutmeg
